Jamie Stachowski is Now Serving Enormous Sandwiches in Georgetown // Fans of local farmers markets may recognize chef/mad-meat-genius Jamie Stachowski from the stand where he hawks kielbasa, Italian, and bratwurst sausages. Those same sausages can be found filling the glass-enclosed cases at Stachowski's new shop, which opened just over a week ago on Georgetown's 28th Street, NW, in the former Griffin Market space

Neighboring the fresh forcemeats are carnivorous delights--many from local farms--like dry-aged short-ribs and Kansas strip steaks, pork loin chops, and pig trotters. The Stachowskis have been offering their expert charcuterie at local farmers' markets, but now you can pick them up at their new brick-and-mortar location.

Located on a quiet Georgetown corner, the shop is easy to miss. But walk by and the aroma of freshly cured meats will make you forget wherever else you were headed. Meat up at Stachowski Market and Deli // The neighborhood butcher shop has become as hard to find as good liverwurst. Enter meat maestro Jamie Stachowski, a fixture at local farmers' markets. The chef has a new cure-all for both problems with his new Stachowski Market and Deli in Georgetown, which centers around two cold cases packed with house-made cold cuts and prime proteins.

The lunch menu focuses on supersize sandwiches, which can easily feed two. Piles of juicy pastrami ($12) arrive on toasted pumpernickel with a hefty dose of spiced brown mustard, and a side of three crisp pickles.The four-meat grinder ($11) wedges slices of soppressata, salami, coppa and fat-speckled mortadella into hearty peasant bread, along with circles of sharp provolone...MORE

Inside Stachowski Market and Deli, Now Officially Open // Well, consider those lunch plans made — the Stachowski Market and Deli is now open in Georgetown's old Griffin Market space. Per Urban Daddy, the butcher shop quietly opened over the weekend and is now offering the charcuterie that owner Jamie Stachowski has long been selling at local farmers' markets. This brick-and-mortar space has been much anticipated since it was first announced in the fall. Eater stopped by for a look at the pig-shaped sandwich board and what goods are filling up the deli cases.

While the market is still filling up deli cases, they've got things like pork loin chop, skirt steak mignon, short ribs and a pancetta-wrapped muscovy duck in one case. The other bears the Stachowski charcuterie such as their smoked kielbasa, duck prosciutto, pate and more.
